Vat 17 & Marinated Olive Medley

If you’ve ever found yourself needing an elegant, last-minute appetizer made from ingredients already in your fridge, you’re just like us! We created this marinated olive medley with Vat 17, garlic, dried figs, and capers — perfect for holiday hosting, weeknight gatherings, or impromptu visits from hungry loved ones.

What You’ll Need:

  • ¼ cup olive oil

  • 1 large or 2 small cloves garlic, pressed

  • ¼ teaspoon coarsely ground black pepper

  • ⅓ teaspoon sea salt

  • 2 teaspoons capers

  • 4 ounces Vat 17 World Cheddar, cut into ½-inch cubes

  • ¼ cup dried figs, sliced (about 5 figs)

  • ½ cup whole pitted Kalamata olives

  • 10 colossal Greek olives stuffed with garlic

How to Make It:

  1. In a small bowl, whisk together the olive oil, garlic, black pepper, sea salt, and capers. Let stand for a few minutes to allow the flavors to meld.

  2. In a separate bowl, combine the cubed Vat 17, dried figs, and olives. Pour the marinade over the mixture and toss gently to coat.

  3. Serve right away for a bright, fresh flavor, or let it marinate in the refrigerator overnight for deeper infusion. Allow the medley to come to room temperature before serving.
