Roasted Delicata, Kale, & Caramelized Onion Pizza

After we tasted this Roasted Delicata Squash, Kale, and Caramelized Onion Pizza featuring The Stag, we couldn’t wait to share the recipe! Seasonal veggies shine in this simple, end-of-autumn dish. Earthy sweetness of delicata squash, rich caramelized onions, wholesome kale, and a drizzle of balsamic glaze atop melty bandage wrapped Cheddar makes for a totally cozy weeknight meal.

What You’ll Need: 

  • 1 delicata squash

  • 3 1/2 tablespoons olive oil, separated into 2 and 1 1/2 tablespoons

  • Salt, black pepper, garlic powder, cinnamon, and paprika to taste

  • 1 large white onion, thinly sliced

  • 2 tablespoons butter

  • 1 premade pizza crust

  • 2 garlic cloves, minced

  • 5.3 oz or 1 1/2 cups The Stag, shredded

  • 1/2 cup kale, chopped and tossed with 1 teaspoon olive oil

  • Balsamic glaze, we used a premade one form our local grocery store

Directions: 

  1. Preheat oven to 425°F.

  2. Prepare the delicata squash. Thoroughly wash the outside—the skin will be left on because it becomes very soft when cooked. Cut off the tips to create flat surfaces, then cut the squash in half, length wise. Scoop out the seeds (set them aside if you’d like to roast them like pumpkin seeds). Cut the halves into half moons no more than 1/4 thick. Line a baking sheet with foil, add your cut squash, and drizzle with 2 tablespoons olive oil. Season the cut squash with salt, black pepper, garlic powder, cinnamon, and paprika, and place in the oven. Bake for 15 minutes.

  3. While the squash bakes, begin to caramelize the onion. Melt the butter in a large fry pan, add your onions, and sauté on medium low heat until brown. Stir frequently for even browning.

  4. Once the squash is done, prepare your pizza. Rub the base of the crust with remaining olive oil and minced garlic. Top with The Stag, kale, and squash. Bake based on the pizza crust’s package directions, and until the cheese is melted. The crust we used baked at 425°F for 15 minutes.

  5. When the pizza is finished baking, top with the caramelized onions and a drizzle of balsamic glaze. Enjoy!
