Samantha’s Pasta Salad

From the kitchen of our team member, Samantha, comes one of her go-to weeknight recipes! Samantha’s Pasta Salad boasts hearty chunks of 1 Year Select, crisp cucumber, fragrant herbs, savory black olives, and zesty andouille sausage. It comes together quickly and keeps getting better as the flavors infuse—perfect for storing in the fridge and enjoying across multiple mealtimes.

What You’ll Need:

  • 6 oz 1 Year Select AA Grade Cheddar, cubed

  • 1 lb rotini pasta

  • 1 English cucumber

  • 10 oz precooked andouille sausage

  • 1/4 cup basil, chopped

  • 1/4 cup parsley, chopped

  • 4.5 oz of pre-sliced black olives

  • 3/4 cup olive oil

  • 1/2 cup red wine vinegar

  • Garlic powder

  • Cracked black pepper

  • Sea salt

How to Make It:

  1. Bring a large pot of salted water to boil over high heat. Add the pasta. Cook until the pasta is al dente. Drain, rinse with cool water, and set aside.

  2. Wash, chop, and prep your other ingredients. In a large bowl, combine your cooked pasta, cubed 1 Year Select, andouille sausage, veggies, herbs, and seasonings. Add the olive oil and red wine vinegar and mix gently to evenly combine. Adjust all ingredients to taste.

  3. For best results, cover the salad and allow it to chill and marinate in the refrigerator for at least an hour, or overnight.
