Rattlesnake Chilaquiles

Why not start your day with a little extra spice? These simple chilaquiles featuring The Rattlesnake are super tasty and satisfying. We made ours vegetarian, but we also recommend adding chorizo for an extra boost of flavor!

What you’ll need:

  • 1/3 cup The Rattlesnake, shredded

  • Tortilla chips, we used 1/2 of an 11oz bag

  • 1 1/2 cups Enchilada sauce, homemade or store bought

  • Eggs

  • Avocado, sliced

  • Red onion, thinly sliced

  • Cilantro, chopped

  • Lime wedges

How to make it:

  1. Bring the enchilada sauce to a simmer in a frying pan or cast iron skillet while you prep your other ingredients. Once the sauce is simmering, add your tortilla chips. Using a pair of thongs, flip and turn the tortilla chips to fully coat them with the sauce.

  2. In a separate pan, cook your egg(s) however you like. We chose sunny side up!

  3. Take the pan with chips off the heat and sprinkle with The Rattlesnake, and top with your egg(s), avocado, cilantro, red onion, and lime wedges.
