Cheddar & Sweet Apple Salad

One of the things we look forward to each Fall is the bounty of sweet, freshly harvested apples. While we enjoy many different kinds of apples, we continuously find ourselves searching out the beloved Honeycrisp. This recipe pairs our sweetly nutty The Fawn with fresh, crisp apples. The other ingredients round out the salad to create the perfect balance of sweet and savory, creamy and crunchy.

makes approximately 4 servings 

What You’ll Need: 

  • 1 cup The Fawn, coarsely shredded

  • 4 Honeycrisp apples, washed, cored, and chopped, any other crisp sweet apple can be substituted

  • 1 cup celery, chopped

  • 1 cup roasted cashews

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • 4 tablespoons heavy whipping cream

  • Freshly ground pepper (optional)

Directions: 

  1. Shred approximately 4 ounces of The Fawn and set it aside.

  2. In a medium mixing bowl toss together the chopped apples, celery, and cashews.

  3. In a separate small bowl whisk together the lemon juice, olive oil, and whipping cream until it is nicely blended.

  4. Add the dressing to the apple, celery, and cashew mixture. Toss all of the ingredients together to evenly coat them. Add The Fawn and ground pepper and mix gently to incorporate the cheese into the salad.
