Two Grilled Cheese Recipes for Fall

What’s better than a grilled cheese sandwich? Two grilled cheese sandwiches! One spotlights our Whole Foods Market Exclusive 36 Month Aged Cheddar, arugula, sliced apple, and Dijon mustard. The other stars The Blue Jay, bacon, and caramelized onions. They’re best enjoyed by sharing half of each and getting cozy with someone you love.

What You’ll Need:

Bacon, Blue, & Caramelized Onion Grilled Cheese

  • The Blue Jay, to taste

  • Bacon, cooked to taste

  • ½ of a yellow onion, thinly sliced

  • 1 tablespoon butter

  • A pinch of salt

Cheddar, Apple, Arugula, & Dijon Mustard Grilled Cheese

  • Whole Foods Market Exclusive 36 Month Aged Cheddar, to taste

  • About ½ of an apple, thinly sliced

  • Dijon mustard, to taste

  • Arugula, to taste

For Both

  • 2 tablespoons softened butter

  • 4 slices sandwich bread

Pro Tip: Use a mandolin to slice your apples and onions!

How to Make Them:

Bacon, Blue, & Caramelized Onion Grilled Cheese

  1. Preheat your oven to 400°F and line a baking pan with parchment paper or foil. Place strips of bacon in a single layer to allow for even cooking (extra bacon can be saved for another recipe or popped in the freezer for future use). Cook the bacon for 15 to 20 minutes, depending on your desired crispiness.

  2. While the bacon is cooking, melt 1 tablespoon of butter in a fry pan over medium low heat. Add the thinly sliced onions and a pinch of salt to the melted butter. Sauté over medium low heat for about 20 minutes to caramelize, stirring frequently for even browning.

  3. Assemble your sandwich: layer The Blue Jay, the bacon, and the caramelized onions between two slices of bread.

Cheddar, Apple, Arugula, & Dijon Mustard Grilled Cheese

  1. Assemble your sandwich. Spread the Dijon on one slice of bread. Layer the Cheddar and sliced apple, and arugula on the other slice. Top with the slice you spread the mustard to help the arugula stick and stay inside the sandwich.

Finish Them Up Together

  1. Butter the outside of the top slice of each sandwich with ½ tablespoon of butter.

  2. Melt the remaining tablespoon of butter in a pan over medium to medium-low heat. Place both sandwiches in the pan, non-buttered side down. The buttered side will be cook after you flip. Cook sandwiches for about 4 minutes on each side, or until they reach your desired crispiness.
