The Night Walker Holiday Fondue
There’s always a feeling of festivity when it comes to fondue. We love to make it for intimate gatherings with family and friends, especially during the holiday season. This fondue recipe featuring The Night Walker, Chardonnay, a little bit of cinnamon, and J. Henry Bourbon is sure to bring some warmth this winter.
serves 4 - 6
What You’ll Need:
20 oz. The Night Walker, shredded
1 cup Chardonnay
1/4 plus 1/8 teaspoon cinnamon
1 Tablespoon J. Henry & Sons Bourbon
Selection of accompaniments for dipping
Accompaniment Ideas:
Baguette, torn or cut into cubes
Apple and Bourbon Sausages, sliced
Fresh apples and pears, sliced
Ravioli or tortellini, cooked
Oranges, peeled and cut into segments
To Make the Fondue:
In a heavy bottomed pot, heat the wine over medium-high heat. When tiny bubbles begin to form, reduce the heat to medium-low and add the shredded cheese one handful at a time, stirring gently with a wooden spoon.
Continue cooking the cheese until it is melted, smooth, and fully incorporated into the wine.
Stir in the cinnamon and the bourbon.
To serve, light the candle or burner of the fondue pot. Warm the fondue pot. Pour the melted cheese into the warmed pot and serve with your accompaniments of choice.
