Ultra creamy sheep’s milk Blue cheese infused with cow’s milk cream

L.A. International Dairy Competition – Gold Winner

The Indigo Bunting is a rare, ultra creamy Blue cheese only available based on the natural rhythms of Wisconsin sheep milk season.  The milk is soft, silken, and rich in flavor.  On its own, the sheep’s milk is extremely creamy. But in order to create this extra special Blue we added a liberal amount of cow’s milk cream to create The Indigo Bunting’s extraordinary velvety texture. This extreme decadence combined with a distinctive, yet delicate Blue strain is a beauty to behold. Like its namesake, The Indigo Bunting only shows its beauty to the cheese world during the summer months, with occasional rare sightings in October and November. But as the cold north wind begins to blow, it vanishes in the night until next spring.

  • Beers: Nut Brown Ale, Imperial Stout, Porters
  • Wines: Port, Sauvignon Blanc
  • Hard Pairings: Hard Ciders, Bourbon, Scotch
