Red, White, Bacon & Blue Grilled Cheese

As the weather continues to warm up here in Wisconsin, we have started to think summertime thoughts at Deer Creek! What goes better with sunny days than a BLT? We updated the classic sammie with a Red, White, Bacon & Blue grilled cheese recipe featuring The Blue Jay. It would be nice if we could tell you how amazing it is, but we can’t– our mouths are full.

Red, White, Bacon & Blue Grilled Cheese

makes 4 servings

What You’ll Need:

  • 6 slices of bacon
  • 2 tomatoes
  • 8 slices of Italian bread
  • 5.3 oz wedge of The Blue Jay
  • 2 c mixed baby greens
  • butter

Directions:

  1. Cook the bacon according to the package directions. When the bacon is browned and crispy, place it on paper towel to drain. Set the bacon aside.
  2. Slice the tomatoes and crumble The Blue Jay.
  3. To assemble the sandwiches, place four pieces of bread on your work surface. Top them with the cooked bacon, sliced tomatoes, and crumbled Blue Jay. Butter the remaining four slices of bread and place the slices on top of the sandwiches, buttered side up.
  4. Melt 1 tablespoon of butter in a large fry pan over medium heat. Place the sandwiches in the pan and cook them until the bread is light brown and toasted. Carefully flip the sandwiches over and continue cooking until the opposite side is toasted, and the cheese has started to melt. Using a spatula, transfer the sandwiches to your work surface. Gently remove the top slice of bread. Place one handful of mixed greens on each sandwich. Replace the top slice of bread and cut the sandwich in half to serve. Serve hot.
