The Doe Christmas Crackers
Instead of cookies, Santa’s hoping you’ll leave out some cheesy holiday crackers this year! These whimsical crackers featuring The Doe are a buttery, savory take on what you can create with your favorite cookie cutters. Plus, they come together in less than an hour. Topped with crushed pistachios, flaky salt, fresh cracked pepper, they are sure to make any table merry and bright.
makes approximately 36 crackers
What You’ll Need:
1 1/2 cups flour
1/2 cup butter, cubed
2 cups The Doe, shredded
1/4 teaspoon salt
1 tablespoon water
Crushed pistachios
Flaky sea salt and coarsely ground black pepper
Directions:
Preheat oven to 375°F.
In a food processor, combine the flour, butter, cheese, and salt. Pulse or mix until a dough forms, adding the water as needed.
On a lightly floured surface, roll out the dough and cut into desired shapes. We used a variety of holiday cookie cutters to make it fun!
Transfer the cutouts onto an ungreased cookie sheet. Sprinkle each cracker lightly with pistachios, salt, and/or coarsely ground black pepper, or leave them plain. Using your fingertips, gently press the pistachios, salt, and pepper into the crackers,
Bake for 10 – 12 minutes until lightly golden brown. Carefully transfer the crackers onto a wire rack to cool.
